Homemade Chorizo Pizza

This is another recipe from our friend, Olivia Nadon, recent graduate of Northwest Culinary Academy of Vancouver and former soccer player at Dalhousie University in Halifax, Nova Scotia. 

Save money and eat healthier by making your own pizza at home and enjoy it with your favorite Saturday night movie. Chorizo sausage is high in protein and roasted veggies are a nutritional and yummy compliment to the spicy meat. If you're ambitious and want to make your own dough, here's a link to an easy recipe. Otherwise, most supermarkets sell pre-made dough to use. 

Tomato Sauce:

1 28 oz can of tomatoes
1 medium sweet onion
2 cloves garlic, minced
1 Tablespoon olive oil

Directions:

1. Sautee sweet onions and garlic in olive oil until translucent
2. Add tomatoes over low-medium heat and simmer for a minimum of 30 minutes
3. Add fresh basil as desired
4. Using a blender (or immersion blender), blend sauce until smooth

Toppings:

12 oz chorizo sausage
1 Cup white cheddar cheese
1 Cup bell pepper of choice, julienned
1/2 Cup sweet onion, sliced
1 Tablespoon olive oil

For Pizza:

1. Preheat oven to 450 degrees while making sauce
2. Roast bell peppers and onion on baking sheet for 20 minutes at 450 degrees in oven
3. While bell peppers are roasting, chop chorizo into rounds and grate the cheese
4. Spread olive oil over pizza dough and then coat a thin layer of tomato sauce
5. Top with chorizo, roasted onions and bell peppers. Sprinkle cheese on evenly over pizza
6. Bake pizza in oven until cripsy, between 15-25 minutes, depending on your oven.
