Recipe: Summer Fresh Salad

This is a great salad for lunch that is easy to make in advance to take to school or work! Light, fresh, crispy and delicious! Ingredients:

Salad:

  • 2 Julienned red and yellow bell peppers
  • 1 Grated large carrot
  • 1/2 Cup Edamame
  • 1 Chopped tomato
  • 1 Cup Shredded green cabbage
  • 1 Cup Kale
  • 1 Baked chicken cut into small pieces

Dressing: Tzatziki Sauce 

  • 1 Cup plain greek yogurt
  • 1 minced clove of garlic
  • 1 Tablespoon lemon juice
  • 1/2 Cup grated cucumber
  • 1 Tablespoon chopped fresh dill
  • 1 Tablespoon chopped fresh mint
  • Salt & pepper to taste
